Red Lentil soup




This golden soup is one of our very favorites to make and share with the family. It’s super comforting but also light and not too rich—which is such a nice combination in the colder months.

TIP: This soup also cooks fairly quickly after you get the chopping done, which makes it a good one for making when you don’t have a ton of time in the kitchen.

Ingredients:

- 2 Sweet Potatoes

- 250gr Red Lentils

- 300 gr Butternut Squash

- 2 Carrots

- 200 ml Almond Milk

- Turmeric, Paprika

- 500 ml Vegetable stock

- Salt and Pepper (a pinch)

- Garlic (1 clove)

- 1 onion


Preparation

Lightly brown the onions and the garlic in the oil

Add in the vegetable stock, milk, red lentils, potatoes, butternut squash and let it simmer.

Puree everything and serve.

You can add some freshly cut cilantro.
